In my previous post I wrote about 2 lbs of flat bread that I
purchased from Coscto and what I was going to do with all that bread. The flat
bread looked perfect for pizza so I cut one piece in half and froze the rest.
To freeze the bread, I cut it into portions, wrapped them in foil and stuck them
in freezer zip lock bags before placing them in the freezer.
Now back to the flat bread pizza. I figured I would be
vegetarian for the evening so I made a spinach and mushroom pizza but, feel
free to use the toppings that tickle your fancy. I used frozen spinach but of
course, fresh spinach would be so much better. Also, I marinated my mushrooms,
but feel free to use plain mushrooms instead. That is the beauty of cooking, you
can tailor recipes to your personal taste.
Ingredients
Half flat bread (I used Europeasant flat bread from Costco)
3 – 4 tablespoons marinara sauce
½ a cup cheddar
cheese
½ cup frozen spinach (let thaw out and remove excess water)
2 medium sized Portobello mushrooms caps cleaned and thinly
sliced (baby bella’s work just as well)
Ingredients for
mushroom marinade
2 teaspoons Worcestershire sauce
2 tablespoons low sodium soy sauce
2 tablespoons balsamic vinegar
1 teaspoon olive oil
3 cloves garlic chopped

If you
are going to make the marinade, mix all the ingredients together, add mushrooms
and let marinade for 20 – 30 minutes
Turn on oven broiler, heat cast iron skillet (or pan that
can go under broiler), add mushrooms and let cook until most of the water has evaporated,
stir occasional and try not to overcrowd pan.
Once most of the water has evaporated remove skillet from
heat and place in broiler for about 5 minutes. Watch to make sure they do not
burn.

Flat Bread Pizza
Turn oven on to 350F
Now assemble the pizza by basically layering the ingredients
Place the flat bread on a baking sheet
Spread marinara sauce on flat bread
Distribute spinach
Distribute mushrooms
Add the cheese and bake for 15 – 20 minutes
Added cheese, now it is ready for the oven |
