These were a favorite
of mine as a child growing up. Bananas that were as tad too ripe were always
turned into fritters or used to make banana nut bread. Banana fritters are great on their
own, dusted with powdered sugar or like mini pancakes with a little butter jam or syrup.
I have also enjoyed these with mango sorbet or ice cream.
Ingredients
- 2 large ripe
bananas (or 3 medium bananas)
- 1 ½ cups all-purpose
flour
- 2 eggs beaten
- ½ cup milk
- ¼ cup sugar
- 1 teaspoon
vanilla extract
- 1 teaspoon
baking powder
- ½ teaspoon
cinnamon
- A dash of
grated nutmeg
- Oil for frying
Directions
In a large bowl, mash peeled bananas with a fork
In a separate bowl mix together flour, sugar, baking powder, cinnamon
and nutmeg
Add milk, eggs, and vanilla to the mashed bananas and mix
Add the flour mixture to the banana mixture and combine
Heat oil in a frying pan (I used just enough to cover the pan and added more as needed)
Use a large spoon to scoop portions of the batter and drop into the hot oil
Fry on each side until golden brown (about 2 minutes each side). Watch carefully and regulate heat as they can burn easily

Once cooked, remove from pan and place on a plate lined with
paper towels to drain
