Crockpot Ribs


Do you ever have those days when you just don’t feel like slaving away in the kitchen for hours, or you don’t have time to cook but want to have a good meal? I know I do and that led me to purchase my first crockpot. I got the crockpot about a year ago and I have to admit that I have not put it to good use. Very sad since I have a number of recipes to try including crockpot lasagna – yeah really, stay tuned for that one!

In any event, I had friends visiting for the weekend and wanted to prepare something delicious that did not require too much of my time and attention. What better kitchen utensil to use than my crockpot. I decided to make barbecued ribs and to be a little adventurous I made my own barbecue sauce.  

Barbecue Sauce


2 cups ketchup
1 cup water
½ cup apple cider vinegar
8 tablespoons brown sugar
1 tablespoon lemon juice
2 tablespoons Worcestershire sauce
4 cloves garlic smashed
1 teaspoon chili powder
1 teaspoon black pepper
1 teaspoon paprika
1 bay leaf
2 cloves
¼ teaspoon all spice seasoning 

Directions

Put all the ingredients in a pot and bring to a boil. Once the ingredients begin to boil, reduce the heat and let simmer for 50 – 60 minutes, stirring occasionally. The sauce should have a slightly thick consistency when done.  Remove bay leaf and let sauce sit for a minimum of an hour before using. This allows all the flavors to fuse together.




Barbecue Ribs


4 pounds boneless pork ribs (or ribs of your choice)
1 teaspoon salt
1 teaspoon black pepper
Homemade barbecue sauce/1 18 oz bottle of your favorite barbecue sauce
½ a large red onion sliced
1 tablespoon flour and ¾ cup water (optional)

Directions

Season ribs with salt and pepper. Place ribs on broiler pan and broil until lightly browned, about 15 minutes. Cut into serving pieces. Layer the bottom of the crockpot with half the onions, add half the ribs. Place remaining onions on top of ribs and add remaining ribs. Pour barbecue sauce over ribs and onion layers, making sure everything is coated well. Cook on low for 7 – 8 hours or until meat is tender and falls apart easily. If you plan on using the barbecue sauce as gravy, mix the flour in ¾ cup of water and add to crockpot during the last hour of cooking.
