Product of the month – Lollipop Tree Summer Berry Bread

It’s the middle of February and we're supposed to get snow tomorrow but I am already thinking about summer. Bring on the heat! Since I can’t control the weather, I figured I would bring some summer into my home by baking some Summer Berry Bread. I am not sure how popular the Lollipop tree brand is, we discovered it in the food isle at Marshall’s.

We came across the Summer Berry dessert bread mix, bought it, took it home, baked it and were hooked! What you get is a moist bread with a medley of red raspberries, wild blueberries, sweet strawberries and coconut. The coconut comes in a separate package so you can exclude this if you are not a fan of coconut. I love coconut so I definitely include it.

The bread is very easy to make. You just need to add ½ a cup of melted butter, ¾ cup water, 2 eggs, bake for 40 – 45 minutes and you are done. The packet also comes with a recipe for an almond glaze that you can drizzle over the bread once baked...awesome!

As luck would have it, Marshall’s has not carried the product for some time now but thankfully, the Lollipop Tree website is alive and kicking.  One packet costs $8.50 which is a little pricey but I think it is worth it. Check them out!
